This course provides a solid management foundation for anyone interested in the foodservice industry. The curriculum is approved by the American Dietetic Association. Course study covers the organization and responsibilities of food service departments, industry laws and regulations, personal hygiene and sanitation, nutrition and diet therapy, menu planning, purchasing and storing of food, food preparations and service, as well as sanitation and housekeeping safety. Upon successful completion of the course, students with two years of institutional food service management experience may apply under Pathway 3 to take the National Certified Dietary Manager (CDM) ANFP exam. A reference manual will be prepared by the student from the handouts in class. Students should bring a three-hole binder, notebook, calculator and pen or pencil.
Eligibility Requirements:
- Must be a least 18 years of age
- High school diploma or GED preferred
